Ingredients

dough:
wheat flour 1 grade or premium 400g
serum 100g
water 100g
milk 80g
butter 35g
sugar 2 tbsp. l.
salt 6g
dry yeast 6g
filling:
dry cottage cheese 180-200g
starch 1 tbsp. l.
sugar 2 tbsp. l.
vanilla sugar 1 tsp
egg 1/2 pc
jam 100g

Cooking method

Knead the dough with all ingredients, except for salt and oil, for 10 minutes.
Let stand for 30 minutes for autolysis.
Add salt and oil and knead well for another 10 minutes. The dough is soft, but not sticky. Leave to come up in a warm place for 1.5 hours with 2 wrinkles.

Roll out into a square about 40x40cm, cut into 9 squares and leave to rise on a baking sheet in a warm oven for 30 minutes. During this time, prepare the filling by mixing cottage cheese, starch, sugar and 1/2 beaten egg (leave the other half for lubrication).

Take out the squares and cut each with diagonal cuts to about 1/3 on each side:

The dough was kneaded with a kneader, strictly according to your recipe. I also made the filling for the recipe, only I divided the egg - the protein into cottage cheese, and left the yolk for coating.
The dough is amazing. That's just a little messed up in weaving. I wanted to cut the strips with an Italian pasto bike, but it wasn't quite right here.
My baking sheet is not large, the oven is 46 liters, so the buns turned out end-to-end.
