Ingredients

For choux pastry:
Water 200 ml.
Butter (or cooking fat, or margarine, or spread) 100 g
Salt (if not using margarine) 1/3 tsp
Flour 150 gr.
For shrimp cream:
Peeled shrimp 200 gr.
Cream cheese (I have Ricota) 150 gr.
Salt and lemon juice to taste
For tartar
Ripe peach 1 pc. - 250 gr.
Medium cucumber 200 gr.
Red onion 1 small head
Honey
Olive oil
Lemon or lime juice
Coarse salt

Cooking method

  • Making choux pastry
  • Prepare choux pastry. Boil water with oil (I have cooking fat for reasons of economy) and boil with salt.

  • Remove from heat and add flour in one motion without sifting, while constantly stirring with a wooden spatula (just a wooden one!). Stir and return to medium heat. Stir the flour well until a lump forms. Burn the dough. This means keeping it on low heat for 1-2 minutes, stirring constantly. A white coating forms on the bottom of the pot. Just carefully - “to burn” does not mean to fry!

  • Then transfer the dough to a bowl. Cool until warm. And stir in the eggs one at a time. I do not recommend using a food processor, as the dough will be tough. Eggs must be introduced manually one at a time. Each next egg is inserted only when the previous one is completely mixed. This should be done quickly. Therefore, if your husband helps you, it will only be better. The dough should shine.

  • Preheat the oven to 180 degrees. Using a syringe or a regular milk bag, squeeze the dough onto a baking sheet in the form of strips at a distance from each other. Bake until golden brown.

  • Finely chop and pickle the onion in lemon juice in advance.

  • We chop to the state of tartar (small cubes 0.3 * 0.3 cm) peach and cucumber (my store - removed the skin). Add pickled onions. We mix everything. Season with a mixture of lemon (lime) juice, honey, coarse sea salt and olive oil. Stir and refrigerate.

  • To do this, we blender shrimp, cream cheese, salt and lemon juice until creamy. Put in the refrigerator.

  • The cooled eclairs are cut in half lengthwise. Fill the lower part with shrimp cream. Place the upper part on top and fill it with tar-tar. Decorate with a basil leaf. Serve on a glass with a spoon for tartare or decor. We start just before serving.
