Baked beetroot with chocolate balsamic cream

Ingredients

young beets (small) 3 pcs
olive oil 2 tbsp. l
for cream
balsamic vinegar 1/3 cup
sugar 1/4 cup
cocoa powder 1/4 cup
vanilla extract 1/2 tsp
salt 1/4 tsp
cup = 240 ml

Cooking method

  • Trim and peel the beets. Cut it into thick slices.
  • Set aside some beet greens (beet leaves).
  • Place the chopped beets in a baking dish, pour over 2 tablespoons of olive oil, stir until all the pieces are covered.
  • Cover the form with foil, place in the oven, preheated to 2100C, and bake for about 40 minutes until tender.
  • At this time, in a small saucepan, combine the balsamic vinegar, sugar, cocoa, vanilla extract, and salt. Boil the mixture over medium heat until thickened.
  • Rinse the leaves, remove large stems and pat dry.
  • In a small skillet, heat olive oil and sauté the chopped beet leaves until soft.
  • Remove the finished beets from the oven, cool them a little, add the chocolate-balsamic cream and fried leaves. Mix everything and enjoy the unusual taste.
