Parsnip and pear cream soup

Ingredients

parsnip root 160 g
conference pear (small) 2 pcs
white onion 1 PC
water or vegetable broth 200 ml
milk 150 ml
olive oil
ground pepper
salt
balsamic cream

Cooking method

  • Peel and chop the parsnip root, removing the middle. I cut it with a spiromat, where the middle remains in the waste.
  • Peel and chop the pears.
  • In a preheated deep frying pan, first fry the onions and parsnips, then add the pear, pour in water or vegetable broth, salt and simmer until tender.
  • Beat the prepared vegetables with a blender in mashed potatoes, add milk, beat everything again and heat over medium heat.
  • I served soup, sprinkled on top balsamic cream, which I did for another dish.

The soup has a very delicate creamy texture with a sweetish taste. Excellent both cold and warm.
