Basil-mint kvass

Ingredients

Dry rye bread (I have my own black one on rye sourdough) 300 gr.
Water 3 l.
Sugar 200 gr.
Raisins zhmenya
Basil twigs 5 pieces.
Mint twigs 5 pieces.
Fresh yeast (depending on strength) 7-10 gr.

Cooking method

  • Late in the evening, put the rusks of black bread in an enamel pan and pour hot water (60 degrees). Stir so that all the crackers are wet. We leave it overnight. We filter everything in the morning. We heat up to 25 degrees. Pour part of the liquid into a mug (100 grams). Add yeast to the mug and grind well until dissolved. Pour into the general liquid. Add sugar and grass. You can take only basal or only mint.
  • And now let our kvass walk until evening (if it's hot in the apartment). I have 22-25 degrees in the kitchen. Therefore, I kept it for a day. The original recipe contains 10-12 hours.
  • We filter or filter the young kvass. We pour into bottles or glass jars. Add raisins to each bottle, do not cover. At room temperature, kvass must be kept until bubbles appear. It's almost 5 days in my cool. In the heat, I think it will ferment in a day or two. And then seal and refrigerate for 1-2 days. Keep in mind that kvass still ferments in the refrigerator !!!
  • Of course, the process is long, but the kvass will be excellent. Astringent, aromatic, not sweet, excellent thirst quencher and is a wonderful base for okroshka and cold summer soups.

Note

It is very vigorous and very aromatic. I took 10 grams of very fresh yeast. Next time I'll probably add more sugar. I am used to sweet kvass. But I don't know what it really should be. The whole process took me a week and 2 days. But the apartment is cool.
