Ingredients

Ice fish 500 g
Carrot 2 pcs.
Bulb onions 1 PC.
Egg 1 PC.
Vinegar 1 tsp
Salt, pepper, herbs taste
Vegetable oil 2 tbsp. l.

Cooking method

  • I called this fish soup ice for two reasons: firstly, in Chuvashia it is served cold, and secondly, I cooked it from my favorite ice fish, which has almost no characteristic fishy smell, and whose white meat has wonderful, slightly sweetish taste, possibly due to the fact that it feeds mainly on krill.
  • Peel and boil the fish in salted water. While the fish is cooling, lightly fry the peeled and chopped onions and carrots in vegetable oil, and then, adding a little fish broth, simmer until tender. Purée the vegetables with a blender, add the strained fish broth to them, bring to a boil and in a thin stream, stirring the soup, pour in a slightly beaten egg separately. Remove from heat, add vinegar and fish, separated from bones and disassembled into small pieces, cool, pour into plates and decorate with herbs.

Note

ICE FISH - ocean fish. Length up to 70 cm, weight 1.5 kg and more. The body is elongated, glabrous, from yellowish-brown to leaden, with several dark transverse stripes; dorsal and anal fins are dark, with black edges. The snout is significantly elongated, flattened, reminiscent of a pike; the mouth is big. It has a peculiarity, unique for vertebrates, - the blood of this fish is colorless (does not contain erythrocytes). Inhabits the Atlantic, Indian Ocean and West Pacific sectors of the Antarctic. Fishing object.

Ice fish meat is white, juicy, tender, sweetish, contains 2% fat. Ice fish is sold fresh frozen. Used for first and second courses, as filling for pies; good fried with fresh parsley and dill, in fish salads, aspic.
