Ingredients

wheat flour of general purpose or premium 375g
milk 250ml
eggs 1 large C0
pressed yeast 10g
butter (margarine) 25g
sugar 25g
salt pinch
sprinkling poppy
egg white for lubrication

Cooking method

  • There are many recipes for braids and hal on our forum, but I would like to share one more wonderful recipe by Daria Yakovlevna Tsvek. HER bread is something special. It seems that the ingredients are ordinary, but the bread turns out to be wonderful, tender, with a thick bread aroma, very soft and sooo long not stale.
  • • In warm milk, dissolve yeast with 1 teaspoon of sugar and, when they begin to ferment,

  • pour them into a bowl, add flour with just to achieve the consistency of thick sour cream, sprinkle with flour and put in a warm place to approach for 1 hour.
  • • Then add the remaining flour, beaten eggs with sugar, salt and knead the dough. I kneaded in a Bosch kneader, first for 5 minutes at 2 speeds, then at 3 speeds for 5 minutes.
  • • Add melted butter and knead until smooth, silky dough.

  • • Put the dough in a bowl greased with vegetable oil and put in a warm place until the dough increases by 2 - 2.5 times.

  • • After an hour of proofing, knead the dough and roll it into a ball.
  • • Put the finished dough on the table, divide into three equal parts, roll into a bun and let rest for 10 minutes.

  • • Then roll each piece into an oval cake, roll into a rope.
  • • Roll out the rope 50 cm long so that it is thinner at the ends than in the middle. Roll out from the center to the sides.

  • • Put the finished harnesses on the table and braid them. Weave from the center, first in one direction, then in the other. Bend the ends underneath.

  • • Cover with plastic wrap and let stand for 60-90 minutes at 35C.
  • • Grease the braid with egg white and sprinkle with poppy seeds.

  • • Bake at 210C for the first 10-15 minutes, then at 170 until tender. In general, it took me 40 minutes to bake. Focus on your oven.
  • • Cool the finished braid,

I will give full layout:
1.5 kg of flour, 3 glasses of milk, 5 eggs, 50 g of yeast, 100 g of butter or margarine, 100 g of sugar, 1/2 teaspoon of salt, poppy seeds.

I took a quarter of the recipe. The braid turned out to be very impressive in size. On a 38x40 baking sheet, it lay diagonally and increased even more when baking. I have no idea what the "bun" from the complete recipe will be.

It was necessary to take 3/4 cup of milk, but in this situation the dough turned out to be stone and did not collect in a lump at all, I had to add 1/4 cup.
