Corn ice cream with cardamom and maple syrup

Ingredients

corn 2 pcs
milk 1 h
cream 1/2 h
brown sugar 1 / 4h
cardamom pods 5 pieces
salt pinch

Cooking method

  • Boil the corn.
  • Cut off the corn kernels and grind them in a food processor with a couple of tablespoons of milk.
  • In a small saucepan, combine cream, milk, sugar, cardamom.
  • Heat the mixture over medium heat. While it's warming up, add the chopped corn.
  • Bring to a boil, but do not boil. Remove from heat, cover and let sit for 30 minutes.
  • Strain the mixture through a sieve, add a pinch of salt, pour into molds and freeze.
  • Drizzle with maple syrup before serving.

If you grind the corn in a regular blender and then strain, then a fairly large percentage will remain in the sieve, but the taste in the ice cream will be felt, it is perfectly set off by cardamom. I didn't want to filter the corn, I ground it in the Vitamix blender. There you can get a completely smooth consistency, the taste of the ice cream is even richer.
