Faced an intricate problem
The child is allergic to wheat, oatmeal and a whole bunch of other things. I bake bread myself, rye on rye sourdough. Everything is wonderful and tasty, and in general. But! If the adult family members have finally said goodbye to their constipation, then the child is weakened by just horror. At the same time, bread bought in bakeries, rye and leavened, does not cause such reactions. You could, of course, not bother and buy, only it is expensive, and even for Moscow, buying pure rye bread is a problem ..
Maybe someone knows what needs to be put in the dough so that there is no such reaction? I would be grateful for your answers and recommendations!

P.S .: my main recipe is this: for 500 g of rye flour, 7 tbsp. l. sourdough, salt, fructose, water, sometimes I add bran, sometimes amaranth or buckwheat flour .. I tried to put the sourdough in a smaller amount - the effect is the same, but the bread is inedible.

A child has celiac disease, and allergies can be to gluten in both wheat and other cereals, including oats, rye, barley, and so on, which contain at least a drop of gluten. And then, any sourdough (wheat or rye) is also made from wheat or rye flour.

It's just that such a reaction occurs precisely to leaven, but this is not the case with yeast bread.
And rye with yeast turns out, to put it mildly, inedible, dense, like a brick ..
