Ingredients

grape yeast (any) liquid 80 gram
wheat flour 1 or in / grade 80 gram

chickpea flour 10 grams
green buckwheat flour 40 grams
dry instant yeast 1 gram
salt 10 grams

Cooking method

  • First we need to make homemade liquid yeast. The process is described HERE... I made yeast from lemon, which I converted into sourdough, and now I made it from blue grapes.
  • Dough (pre-enzyme)
  • Mix yeast with flour, cover and leave to rise. This can take from 6 to 12 hours. It all depends on the strength of the yeast and the temperature. Usually, the mass increases by about three times, sometimes even more.

  • Grape yeast bread made from different types of flour I kneaded the dough in KhP using the "Dough" program. The products were laid according to the instructions for the stove. After 5 minutes, salt was added. The dough is soft, does not stick.
  • The dough is stretched and folded. I put it on fermentation in a dish oiled. Fermentation for 120 minutes (may take less because it is hot now). Stretch-fold once in the middle of fermentation.

  • We form bread of any shape.
  • Proof on paper seam side down under foil for about 60-70 minutes.
  • We make incisions.
  • I baked on a perforated sheet, covering the bread with a cap with steam for the first 15 minutes at a temperature of 240 degrees.
  • If the sheet is not perforated, then you can bake in a dish with a lid, which we heat up together with the oven (then steam is not needed) or on a stone with steam.
  • Then we lower the temperature to 180 degrees, remove the cap and steam (in my case), focus on our baking method. Briefly ventilate the oven.
  • We bake until tender. My total baking time was 40 minutes. Cover crown with foil if necessary.
  • We get it. chill on a wire rack, cut and enjoy.

Very airy, tasty and aromatic bread. I didn't think that green buckwheat would be heard in bread. But there was a small note.
