Mint Panna Cotta with mint syrup

Ingredients

For panna cotta:
Mint twigs with leaves 40-50 gr.
Cream 23% fat and above 300 ml.
Milk 50 ml.
Sugar 50-70 gr.
Gelatin 10 gr.
Frozen spinach 1 washer
For mint syrup:
Mint leaves 30 pcs.
Boiling water 220 gr.
Defrosted spinach (gruel) 2 tbsp. l.
Sugar 460 g
For decoration:
Fresh mint
Berries

Cooking method

  • Cooking panna cotta:
  • Separate the mint leaves from the branches.
  • Pour cream over the twigs. Boil and immediately remove from heat. Cover tightly with a lid and towel. Let it brew until warm.
  • Grind the mint leaves together with sugar and a thawed spinach tablet with a blender until mushy.
  • Pour the creamy mint broth into a blender to the leaves without straining. Beat well. Let it brew.
  • At this time, fill the gelatin with milk. Let it swell and dissolve in a water bath, not letting it boil. We mix everything together. Stir the mixture with a spoon. Rub the entire mass through a sieve. Pour into molds (I have plastic jars from Ricotta or Mascarpone cheese). Place in the freezer.
  • Making mint syrup:
  • Pour mint leaves with boiling water and, tightly wrapped, let it brew for 10-15 minutes. Keep in mind - the longer they stand, the darker the broth will be. And by no means green.
  • Strain the broth and squeeze the cake.
  • Boil two-thirds of the broth with sugar until a syrup is made for 10-12 minutes. Then add the remaining broth and spinach gruel. Boil. Turn off. Cover and cool with a lid.
  • Serve Panna Cotta with green gooseberries, drizzled with syrup.

Note

It turned out unusually tasty. And really refreshing!
Spinach was used solely to correct the color, as mint gives more color to cocoa. There is no spinach flavor. Mint gives the taste.
The structure is very delicate. I chilled it in the freezer - it's very hot, so it gave me some crystals. But then when she stood on the table and thawed the taste became deliciously tender and mint. Highly recommend.
