Cold soup with mussels

Ingredients

Mussels in shells 40 pcs.
Carrot 1 PC.
Onion 1 PC.
Celery stalks 1 PC.
Chilli 0.5 pcs.
Bay leaf 1-2 pcs.
Dill 2-3 twigs
Dry white wine 1 glass
Rice 100 g
Eggs 2 pcs.
Kefir 1 glass
Salt taste
Greens optional

Cooking method

  • Pour 1.3 liters of water into peeled onions, celery, carrots and peppers and boil the vegetable broth. Without removing from the heat, add wine, dill, bay leaf, salt to the broth and lay the mussels.
  • Cold soup with mussels
  • Bring to a boil over low heat and, after making sure that the mussels have opened, remove the soup from the heat.
  • Separate the mussel meat from the shells,

  • and strain the broth and cool.
