Cold dessert beetroot with prunes, apple (pear) and rice

Ingredients

Baked beets (boiled) 2 small
Small apple 1 PC.
Small pear (optional) 1 PC.
Lemon juice 1-2 tsp
boiled rice 4-6 st. l.
Water about 500 ml
Salt pinch
Sugar taste
Sour cream or whipped cream 2 tbsp. l.
Prunes 6-8 pcs.
Raisins small handful
Cinnamon optional pinch
Mint or lemon balm for serving

Cooking method

  • This kind of beetroot was made by my grandmother. I tried to restore from memory, it turned out similar, even more interesting due to the variety of ingredients.
  • It is difficult to give the exact amount of liquid in this recipe, since beets are all different.
  • The broth can be prepared in two different ways.
  • I had baked beets, so I did the first way.
  • - Bake the beets, peel, grate and pour boiling water with lemon juice. Let it brew until cooled and strain, squeezing well.
  • - Along with the beets, pour a small amount of boiling water over the well-washed prunes and raisins. Save the infusion, it can be added to the soup, if someone likes a broth of prunes. Or just drink it later.
  • - Peel the apple and pear, cut into small cubes and sprinkle with lemon juice.
  • - Salt and sugar beet broth. Can be acidified to taste.
  • - Divide in portions into plates of 2 tablespoons of rice, put the chopped apple and pear, pour the broth, garnish with raisins and prunes.
  • - Put sour cream or whipped cream on top and sprinkle with cinnamon if desired. I served sour cream separately.
  • - Decorate with mint, where can you go without it in summer!
  • Beets can be immediately peeled, grated or finely chopped, add water and lemon juice and boil over low heat to obtain a decoction.

Note

I did it before leaving, I forgot to write down the exact amount of water. There are two large portions or four small portions. You can add some apple juice to the water, it's also delicious!
Bring the broth to your liking!

You can, of course, put the soup on the grated beets itself. But I wanted to focus on fruit additives over beets.
