Beetroot with mashed tomatoes and egg-sour cream dressing

Ingredients

Beet 600 g
Tomatoes 3 pcs.
Fresh cucumber 2 pcs.
Radish 4 things.
Boiled egg 2 pcs.
Sour cream 3 tbsp. l.
Horseradish (grated, ready-made in cans) 1 tsp
Water 1.3 l
Salt taste
Lemon juice taste
Green onions, dill bundle

Cooking method

  • Cut the tomatoes crosswise, pour boiling water for 1-2 minutes, remove the skin from them and chop with a blender in mashed potatoes. Pour into a saucepan - I cooked in a slow cooker Beetroot with mashed tomatoes and egg-sour cream dressing
  • Peel the beets, grate on a coarse grater and place with the tomatoes Beetroot with mashed tomatoes and egg-sour cream dressing... Pour in water. Simmer for 30 minutes, then add salt, remove from the stove and leave to cool.
  • Prepare the dressing. Grate boiled eggs, add horseradish and sour cream, mix, put in a gravy boat and refrigerate.
  • Add cucumbers and radishes, finely chopped greens to the chilled beetroot. Add egg-sour cream dressing and lemon juice to taste
