Sweet and sour chinese sauce

Ingredients

Cherries and red currants with juice 125 gr.
Garlic 2-3 cloves
Peeled onions 40 gr.
Ginger root 6 gr.
Olive oil 3 tbsp. l.
Soy sauce 2 tbsp. l.
Brown sugar 2 tbsp. l.
Fresh tomato 180 g
Water 1 tbsp. l.
White wine vinegar (or just table vinegar) 1 tbsp. l.
Potato starch 1 tbsp. l. with a small slide
Spices: ground cinnamon, white pepper, allspice, coriander, bay leaf
Mustard 0.3 tsp
Tabasco sauce 3-5 drops

Cooking method

  • Sweet and sour chinese sauce
  • Preparation:
  • Scald the tomato. Peel off and cut out a hard core. What is it? You do not know? You are a happy person. You have good tomatoes.
  • Beat the berries with juice and the tomato with a blender in mashed potatoes.
  • Finely chop the onion. Crush the garlic and chop it finely. Grate the ginger. Fry everything in olive oil until transparent. Prevent gold. Add vinegar, tomato puree, sugar, soy sauce, mustard. Boil and add starch diluted in a spoonful of water in a thin stream. Add spices and Tabasco sauce. Boil down a little. Cool down. Beat again with a blender or rub through a sieve. The sauce is ready.
  • Ideal for everything.
  • Medium hot sauce. If you need more vigorous, then feel free to pepper and Tabasco to help you! The basis is there - let's add some spice!

Note

Traditional Chinese sweet and sour sauce adds a special flavor and piquancy to any dish. Any everyday dish - cutlet or chicken fillet - in combination with such a sauce will give incredible harmony and sophistication. It also has a funky color that will brighten any dish!

As a result of combining different tastes (sometimes incompatible at first glance), a sauce is obtained that amazes with its extraordinary flavor palette. It also contains the sourness that the berries give. Here and the pungency and bitterness of ginger, spices, garlic and onions. The apogee is the sweetness of sugar, soy sauce and tomato. There are a lot of cooking options for this sauce. I present to you mine.
The sauce turned out to be wonderful. I have been picking up this one for a long time. Obtained through a painstaking selection of ingredients. To begin with, I was struck by the taste of tomato and red currant! I cooked this cream soup... This is something! Especially if both tomato and currant are of good quality! I used the sauce for jellied fish - just the perfect pair! Very tasty with cold boiled meat. Chicken fillet, which usually comes in a bit dry and purr with sauce! Well, let alone rice ...

"... cut a hard core. What is this? You don't know? You are a lucky person. You have good tomatoes."

"We, too, judging by the not very ripe cores of tomatoes, are not entirely happy ... They are taken from afar, therefore they are picked unripe. Others are too soft - they do not last long. Conclusion: the best ones grown in their own garden!

And your sauce is wonderful, thanks Irisha! There will be a lot of currants if the rains do not wash away. With ginger, soy sauce - it should have an interesting taste.

Anyuta hello! I miss you! I suppose you bake beautiful bread?
And take the sauce - due to the berries, it has a beautiful color. Tomatoes will not give this, without dyes, of course!
Thanks for taking the time and stopping by!

You are my savior! I bow at your feet! No, you are twice the savior!
First, you saved me from purchased ketchup. I love him, I am sinful. And having eaten your sauce, I suddenly fell out of love. And secondly, she saved me from frozen red currants, passed through a screw and languishing in the dungeons of the freezer. Well this is a beauty - thawed currant juice with pulp, crumbled a tomato, threw in spices, "made friends" and thickened it. It remains to blend the current and enjoy
Good sauce! Good for everyone - in taste, color, and consistency. So I would take it and smear it on bread. Keeps only what is more pleasant to smear on meat
Incidentally, I had to make it with powdered dried ginger. Fresh in local stores suddenly died out But it turned out great. Bear in mind
