I made puffs, immediately rolled out the top and bottom as one whole piece, then rolled one half at a time - I immediately stretched this half on the sides and immediately it became clear how it would cover the other half.
I spread out the filling and wrapped the mesh on it, like a book to close and gently pinched the remaining 3 edges. I trimmed the excess at the edges either with a wavy fit (disk on the handle) or with a piece for ravioli, in the photo in the background. As a result, it doesn't matter what the puffs are, they are swollen and the waves are barely visible.

All this was done absolutely by eye, this is what happened:
