You can safely cook in a double boiler, without water, but steam. Cooking time depends on the weight, thickness of the product (sausage), and readiness can be checked with a knitting needle.

And you can cook in water, the water temperature is about 80-90 * C, the cooking time is 50 minutes per 1 kg. sausage (meat) weight + 10-20 minutes total time for all meat. We check the readiness with a knitting needle.
