Raspberry paste

Ingredients

raspberry 1600gr
sugar 150gr

Cooking method

  • I have not made pastille from raspberries yet, this is my first experience.
  • For greater benefit, I decided to leave the bones, they do not bother me. But the children didn't really like this option :)
  • I take 400g per pallet.
  • So, take fresh raspberries and beat them with sugar in a blender.
  • If you want pitted, rub through a sieve.
  • Cover the drier trays with baking paper, pour out the mashed potatoes, level with a spoon.
  • I changed the pallet arrangement every 2-3 hours. Dry until the top of the marshmallow sticks to your hands
  • I roll the finished marshmallow and wrap it in cling film. I store it in the refrigerator.
  • Raspberry paste

Note

I have a dryer ZELMER 36Z011, the temperature is not set.

RASPBERRY - the fruits of the eponymous shrub up to 3 m high, with trifoliate or pinnately-compound leaves and white flowers in cluster-shaped inflorescences or scutes. Berries are complex drupes of round, oval or conical shape, red, yellow and purple-black, sweet, fragrant.

Raspberry is widespread in temperate and subtropical parts of Europe, Asia, America. Wild raspberries are found in forests and shrubs. Cultivated. In the former USSR, raspberries are grown mainly in the Moscow, Leningrad, Kursk, Voronezh regions, in the Ukraine, in Belarus, the Urals, and in some regions of Siberia. Garden raspberries are larger, but less sweet and aromatic than forest raspberries. They contain up to 8% sugars, up to 2% organic acids, tannins and pectin substances, up to 30 mg% vitamin C, B vitamins, carotene.
In the middle lane, raspberries ripen in mid-July, in the south - at the end of June. There are remontant varieties, that is, bearing fruit twice a year - in spring and autumn. So that the raspberries do not wrinkle and are better preserved, they are cut off during collection together with the stalk and fruit. Under normal conditions, raspberries are stored for no more than a day, at a temperature of about 0 ° C - up to 7 days. Raspberry berries often contain raspberry bug larvae. To remove them, the berries should be immersed for 10-15 minutes in a cold salt solution (20 g of salt per 1 liter of water), the larvae will emerge and can be easily removed.

Raspberries are used fresh, as well as for processing (jam, jam, jelly, juices, liqueur, syrup, marshmallow, etc.). Dried raspberries, preserves, and jams are often used medicinally as a diaphoretic.

The best varieties: Marlboro, Novost Kuzmina, Novokitaevskaya, Barnaulskaya, Kaliningradskaya, Nagrada, Latam, Alyonushka.

Tell me is it okay to make the marshmallow come off the paper? Or is it better to try foil?
GruSha
supermam, normally just slightly moisten the back side with water and slowly start shooting. It is not necessary to lubricate with anything
