Dried zucchini (restore and fry)

Dried zucchini (restore and fry)

Ingredients

Zucchini 1 kg.

Cooking method

  • I decided to dry the zucchini, and also immediately try to restore and fry them.
  • Cut in circles 3-4 mm thick. and in large cubes. I will say right away that it is better to cut the mugs thicker, since they dry out too much, and when restored, they do not get their original size.
  • The circles dried in 7 hours, but the cubes took longer - about 10 hours. From 1 kg. zucchini I got 55 g.
  • To restore, you need to lay out the zucchini in one layer and pour a little water (water should not cover the product). The rings recovered in 20 minutes (maybe even faster), and the cubes in about 1 hour. Their structure is spongy-rubber
  • I fried the rings according to the principle of making fresh ones, having previously rolled them in flour. It tastes like fresh, but more rubbery, or something. No, they chew well, just not as soft as fresh.
  • I plan to throw the cubes into the stew, it is not necessary to restore them for this, since when extinguished they will restore themselves.

Time for preparing:

10 minutes + 10 hours

A good way to harvest. And I freeze with rings and cubes. I wet the defrosted rings and fry them in flour and eggs, they are obtained as when frying fresh ones. Very good. And I add cubes to vegetable dishes at the end of stewing, it's also delicious.

Thank you! And I used to freeze, but only in cubes. Now I'm saving space in the freezer

I, too, now dry the zucchini in a cube - I cut it on a neiser on a medium cube, after cutting I sprinkled it with salt to drain the juice, rinse it and squeeze it out. I dry for 10 hours, I watched - not all are dry, I will add more.

Tomatoes hardly influenced this, I think so, although everything can be. But the weather could definitely. I noticed that in rainy weather, everything dries much longer.

Afraid that they will grow moldy, so go to the freezer? By the way, mine is also not stone, but not soft either, something in between. What kind of dryer do you have?

Hello everyone!
I keep trying to buy a freezer for harvesting vegetables in season. And here I read a lot, and I think whether it is possible to replace freezing with drying?!? It was the zucchini that wanted to freeze (now they are about 30 rubles each))), and in winter I saw 180 each), as well as cauliflower and broccoli! Question: Has anyone tried to dry these two cabbages? And are any usefulness preserved in dried products? I feed my son with vegetables, all year round, he is on the BGBKBS diet. Well, that is, it receives vitamins only from vegetables.

Hello! In terms of vitamins, there are no more? This is where you read this? On the contrary, much more of them are preserved during drying than when frozen.

For example, it is well written about vitamins in dryers 🔗

The main thing here is to dry at the right temperature for each type of product, and everything will be ok!

You can set it to the maximum, it's just that I have a maximum temperature of 55 degrees on my dryer. Since in the future you will subject the zucchini to heat treatment, you can also set it to the maximum temperature.
julia_bb
Irina, Thank you! I have 65 grams just the maximum temperature. Then I turned it down by 60, it's not ready yet. It's been drying for 9 hours, but I cut the plump ones by 1 cm

I just turned it off, it seems ready, I'll check it tomorrow morning. Total 10 hours
