Chicken roll with basil

Ingredients

chicken's meat 1150 gram
ice water 120 grams
nitrite salt 22 grams
garlic 2 cloves
nutmeg 1/3 teaspoon

Cooking method

  • I bought a broiler carcass.

  • We roll it up.
  • We put on the forming mesh and tie the ends.
  • Insert a thermometer into one roll.
  • Put it in a cold oven.
  • Raise the temperature gradually.
  • 1 hour-50 degrees
  • 2 hours-60 degrees
  • then we raise the temperature to 80 and cook to a temperature inside the roll of 67-68 degrees.
  • We get it. Let cool for an hour and put in the refrigerator.
  • We forget about it for at least 12 hours.
  • We take out, cut and enjoy the wonderful taste.
