Crispy cucumbers in Bulgarian

Ingredients

cucumbers 10-12 kg
vinegar 9% 2 bottles
1 liter. bank:
peppercorns 5 peas
allspice 1 - 2 peas
carnation 2 pcs
mustard seeds 1 tsp (under the knife)
Bay leaf 1 PC
garlic 2 cloves
chilli pepper 1/4 part
dill 1 umbrella
horseradish leaf 1/4 sheet
black currant leaf 2 pcs
cherry leaf 1 PC
extragon a pinch or half of a twig
salt 1 tbsp. l
sugar 1 tbsp. l

Cooking method

  • I give my own proportion of ingredients, which I usually put on a 1 liter jar. You can add herbs and spices to your taste, as you usually use for canning cucumbers. It doesn't matter here, the secret of the recipe in another.
  • Soak cucumbers for 6-8 hours (I soaked overnight).
  • Wash and sterilize cans and lids in a convenient way for you (I sterilized in AG).
  • Put a set of spices and chopped herbs in each jar.
  • Crispy cucumbers in Bulgarian

  • Now comes the fun part!
  • Pour the vinegar into a wide saucepan or bowl and heat over a fire to almost boil, but do not boil!
  • I took 2 bottles of vinegar for my amount of cucumbers. If there are fewer cucumbers, the vinegar can be reduced.
  • Approximate proportions - for 5-6 kg of cucumbers 1 liter of vinegar.
  • Pour cucumbers into hot vinegar and keep in vinegar for 1-2 minutes. The cucumbers should change color, turn slightly yellow.

  • We take out the cucumbers that have begun to change color from the vinegar and fill the jars with them.
  • I did this procedure 5 times, each time heating the vinegar to almost a boil.
  • When all the jars are filled with cucumbers, we completely put water on the fire, and bring it to a boil. Water should be taken per 1 liter - 0.5 liters of water.
  • In each 1 liter jar we lay out 1 tbsp. l salt and 1 tbsp. l sugar.

  • Fill with boiling water, roll up or twist, turn the jar over and shake a little until sugar and salt are completely dissolved.
  • We wrap it in a blanket and keep it until it cools completely.

I overheard this recipe by accident and at first was skeptical. Then I was bribed by the fact that they said that the cucumbers are crispy and very tasty, an exact copy of the Bulgarian cucumbers, which were previously sold in jars.
I just bought 10 kg of cucumbers, and also collected a couple of kg of my own.
I decided to take a chance and roll up all the cucumbers in this way.
I will say right away - I myself closed it like that for the first time. But these cucumbers were very much praised by those from whom I heard the recipe.
I closed in 1 liter jars and rolled them up turnkey. You can take more jars. And close with twist-off lids (with twist).

The taste is moderately sour and crispy, everything was great. But I have a basement. How they stood in the apartment and preserved, this can be suggested by those girls who made according to this recipe and stored in apartments.
