Ingredients

Fresh salmon, fillet 50 g
Young carrots 0.5 pcs.
Grapefruit pink, small 0.5 pcs.
Lemon juice taste
Dried almonds (petals) handful
Mix of peppers and olive oil taste

Cooking method

  • I wanted something bright and unbeaten. A fillet of red fish was found in the refrigerator, and a young carrot in the garden bed. Then everything worked out by itself. The result is an original and delicious carpaccio. It is not shameful to submit to the festive table.
  • Preparation
  • - Cut the fillet of red fish into thin layers, put on a plate, add a little salt and sprinkle with lemon juice.
  • - Cut thin slices of peeled carrots with a "housekeeper" or a "Giant" grater.
  • - Peel the grapefruit by removing the white layer. Cut thin slices from the segments with a sharp knife. That is, at the exit we get grapefruit slices without films and seeds.
  • - Spread the slices of grapefruit on the pickled fish, alternating with carrot slices.
  • - Add a little fresh salad to the carpaccio, preferably red shades, pepper, sprinkle with olive oil.
  • - Decorate the salad with calendula flower petals and almonds.

Note

I really liked the calendula petals in this carpaccio, which added some astringency to the taste. Through their use, I was able to replace the lack of my favorite capers. I will do this carpaccio more than once.
