Wheat bread with mulberry

Ingredients

Dough (pre-enzyme)
fruit yeast 85 grams
wheat flour 85 grams
honey 1 tsp
Dough
dough 150 grams
mulberry puree 150 grams
water 50 grams
margarine 15 grams
sugar 15 grams
wheat flour / grade 400 gram
gluten 5 grams
wet yeast (dry) 3 (1) gram
salt 9.5 grams

Cooking method

  • Opara
  • Take the fruit yeast (I have silk) from the refrigerator, let it warm for an hour.
  • Stir honey in yeast.
  • Add flour, stir.
  • Cover with a foil, making holes in it with a toothpick.
  • Leave in a warm place for 10-12 hours. Increased threefold.
  • Dough
  • Mulberry, wash. separate the tails and purée.
  • Mix the dough with water, puree and sugar.
  • Crumble the yeast (wet) into flour, mix dry with flour. Add gluten and mix very well.
  • Set aside a couple of spoons.
  • Add flour to liquid ingredients.
  • Kneading with a hook. After 5 minutes, add remaining flour, margarine and salt.
  • Continue mixing. The total time is 12-15 minutes.
  • Wheat bread with mulberry The dough is soft, does not stick. Fermentation for 120 minutes. Stretch-fold 1 time in the middle of fermentation.

I personally made it from lemon, grapes, mulberry. Now I already have a shiver, no one knows what.
