AlenKa, the higher the number in the variety, the less it is cleaned of bran, and the whole grain is not at all cleaned of shells. You can use both the first and second grade. Flour with bran is not as sticky as the highest, it is crumbly, coarser, and more useful for the body.

Is it the reason? I do not know. The most common reason is that the wafers are not baked inside, even with a ruddy top. Perhaps the waffle iron is baking actively, and the middle did not have time to grab. And the second reason is that the coating is too sticky, it is better to lubricate it with butter. As for the flour, I see the reason only in the batter - there is not enough flour, and the waffles were too wet, and then the first reason.

Instead of whey - yogurt, instead of baking soda, baking powder, zucchini and cheese a little more. Cheese by the way suluguni. The dough turned out to be thick, not like in the photo.
But in the end the waffles turned out to be cool, even my husband ate it with pleasure (and he hates vegetable dishes).
