Eggplant with oranges

Ingredients

Eggplant 500 g
Vegetable oil 2-3 st. l.
Honey (or Demerara Sugar) 1-2 tsp
Large orange 1 PC.
Garlic 1 clove
Salt
Chilli
Parsley

Cooking method

  • Pour boiling water over the orange and chat in it for 1-1.5 minutes. (This technique will remove dirt from it, activate the release of aromatic oils and increase juice yield). Remove the zest from the orange and squeeze the juice completely (with pulp).
  • Cut the eggplants into cubes and fry on rast. oil. Dissolve honey in orange juice, pour over eggplant, season with salt, add zest, thinly chopped garlic and chili flakes. Simmer all together until the eggplants are ready (you should not boil them too much).
  • After cooling down, keep in the refrigerator for a night, day, two ...
  • Sprinkle with a couple of drops of olive oil before serving.

Note

I usually use honey in this recipe, but today I took demerara. It turned out quite well, but with honey it is still more interesting.
Do not rush to eat these eggplants right after cooking - you will not find anything interesting in them. Put it in the refrigerator and wait until tomorrow ...
