Ingredients

Cedar milk 200 ml
Cream 20% 150 ml
Yolks 1 PC
Sugar 80 g
Corn starch 5 ml
Coniferous twigs 1-2 pcs
For serving honey and pine nuts

Cooking method

  • After making a coniferous cocktail, I got the idea to come up with coniferous ice cream. And then I remembered that there was a jar of cedar milk in the refrigerator for a long time, bought during a visit to the market for organic products. So this recipe was born.
  • To prepare this ice cream, we need several freshly picked spruce or pine twigs (cedar does not grow in the area), cedar milk (prepared or made from pine nuts), yolks and heavy cream.
  • Preparation
  • - We take a couple of the youngest coniferous branches, rinse and dry.
  • - Mix the heavy cream with cedar milk in a saucepan, add a couple of pine twigs there and bring it to a boil over low heat. Let it brew for 10-15 minutes, after which we remove the branches. If you want to get a more intense taste of the needles, then the coniferous branches, needles must be slightly wrinkled with your hands before use.

  • - Beat fresh yolks with a small addition of milk and starch with sugar until a white fluffy mass. We again heat the infusion almost to a boil and pour it into the yolks in a thin stream, stirring constantly. After that, I warmed up the whole mixture a little, but not to a boil. Next, let the mixture cool and send it to the freezer or to the ice cream machine.

  • - If you are making ice cream in the freezer, mix it with a blender or fork from time to time as it freezes to prevent ice formation.
  • - After the last kneading or after freezing in the machine, ice cream can be laid out in portioned bowls and put on top a fresh or sprig of pine or spruce extracted after preparation of the infusion.
  • - When serving, ice cream can be garnished with taiga or pine honey and pine nuts.
  • I have imported coniferous honey "stale", so it went well with this ice cream.
  • It turned out amazingly tasty ice cream, I will definitely repeat it and recommend it to everyone, especially to those who love the taste of pine nuts.
  • The finished cedar milk is very rich and the ice cream can be "lightened" by eliminating the yolks.
