Baked eggplant caviar

Ingredients

eggplant 3 pcs
medium tomatoes very ripe 3 pcs
salt, pepper, garlic taste
onion 1 PC
vegetable oil

Cooking method

  • Wash the eggplants, prick with a fork from different sides.
  • Pour some vegetable oil into the multicooker bowl, put the eggplants and turn on the "Baking" mode for 30-40 minutes. (I have a multicooker Redmond RMS 4503). The eggplants should then be soft.
  • Cut the eggplants vertically not completely and put under oppression so that they cool down and the bitterness goes away.
  • Peel the tomatoes and eggplants.
  • With onions there are 3 options - you can chop finely and lightly fry, you can not fry, or you can not add at all (whoever likes it).
  • Then pass the tomatoes and eggplants through a blender, add salt, pepper, finely chopped garlic, pour a little vegetable oil.
  • Garnish with finely chopped tomato wedges.
  • The caviar turns out to be unusually tasty and as if fresh. I made such caviar for many years on a gas stove, tried it in a multicooker - it turned out just fine!

Yes of course! First, sterilize the jars for 15 minutes, put the hot caviar and sterilize for 30 minutes with a slight boil with the lid not twisted. Only then roll it up.

This summer I cooked caviar and froze it in the freezer (several plastic containers for a sample). I added only oil and garlic in winter, when I defrosted it. It turned out delicious. You can just raw, or you can overcook. It's good that you don't have to mess with canning.
