rosemary 1 tsp
lemon 1/4 pcs

Cooking method

  • Wash the chicken, cut off the wings and drumsticks, they can be used separately. Place the chicken on the breast and make two cuts along the ridge, then carefully remove it. Uncover the chicken and carefully remove the rest of the bones. Go through the carcass with a tenderizer.

  • For the brine, you need to boil and cool the water. Chop the onion and garlic, cut the lemon into pieces. Rosemary, if it's fresh, then grind it too, and if it's dry, then use it like that. By the way, rosemary is a very good natural preservative.

  • Put the chicken, chopped onion and garlic, rosemary, lemon slices and salt in a strong bag (I use freezer bags), cover with water. Tie the bag well and wrinkle a little so that the ingredients are distributed and the salt dissolves. Put the package in the refrigerator for 1-3 hours for pickling (I had it all night).

  • After the chicken is marinated, we take it out of the brine, it is better to remove the pieces of onion and garlic. Blanch the champignons in boiling water for a couple of minutes. Then cut into pieces. Cut the breast slightly on both sides and open it. Spread the champignons over the entire surface of the chicken, sprinkle with freshly ground black pepper to taste.

  • Put the roll in the ham and let stand in the refrigerator for at least an hour.

  • Cook the roll at a temperature of 80 C for 2-2.5 hours.
  • When my roll was cooked, I drained the broth from it, which later turned into jelly. The jelly turned out to be very tasty and I used it with pleasure to prepare other dishes.

Note

I usually use this pickle to cook chicken breasts, after which they usually turn out to be very juicy, but in this recipe it did not disappoint me.

Julia if you do not add lemon, then there will be no broth. Broth is always a sign of error or technology violation. The acid shifted the pH of the minced meat, here the minced meat and the moisture compartment, it curled up even before the heat treatment.
