Pearl barley porridge with pork in a milk cooker

Ingredients

Pearl barley 250 g
Pork 150-200 g
Medium-sized bulb 1 PC.
Small carrots 1 PC.
Garlic 2 teeth
Seasoning 1 tsp
Bay leaf 1 PC.
Salt 1.5 tsp.
Water 650 ml
Sunflower oil. 2 tbsp. l.

Cooking method

  • Designed for a 2L milk cooker. The cooking time is long and you will have to add the water boiling in the milk cooker jacket a couple of times. But it's worth it - the pearl barley will steam out and become soft, saturated with seasonings and the aroma of meat. What is good - the porridge will not burn in the milk cooker and will not "cook" to the walls.
  • Rinse the groats and soak for 3-4 hours, you can even leave them in the refrigerator overnight.
  • Then we pour water into the jacket of the milk cooker and you can put it on the stove (we will save time - while we are cooking everything, the water will warm there). Chop the onion, cut the carrots in half rings or three on a coarse grater. Fry the onion in a skillet with butter for two minutes, add the carrots and fry for another couple of minutes. We cut the meat into small pieces, into pieces 3x3x3cm., Put in a pan, mix and put everything in a milk cooker (I usually fry the meat a little more until light crust, but this is not necessary). Add the cloves of garlic cut in half, seasoning (a mixture of black pepper and various herbs), mix.
  • Drain all the water from the soaked cereal and transfer to a milk cooker. No need to stir! The cereal, as in pilaf, should lie in a continuous layer on the meat. Pour water (you can hot, if you want to save time), salt and throw a bay leaf on top. As the water boils, we put on the lowest heat so that the water gurgles a little in the shirt. And we turn on the timer, in my case 50min. after which it will be necessary to add water boiled in the shirt. This can be done under the tap, by which time all the water has already been absorbed into the cereal and the milk cooker can be tilted slightly. Put it on the stove again and start the timer for another 50 min., After that, pour water into the shirt again and set the timer for another 50 min. So the total time should be about 2.5 hours.
  • We remove the milk cooker from the stove, throw away the bay leaf and immediately, while the porridge is hot, stir, trying to distribute the meat and spices from the bottom evenly with the pearl barley.
  • Can be served immediately with pickled cucumbers and herbs. You can leave it in a milk cooker under a towel to blame it, barley will only benefit from this.

Note

I like to make frying more not in oil, but in lard. In this case, the greaves also go along with the frying and meat in a saucepan. During the cooking process, they practically dissolve.
Unlike most cereals, barley with meat tolerates freezing well. I put it in portioned containers and store it in the freezer. After warming up in MKV, it will be as fresh from the stove.
I usually use a pork shoulder or neck. You can do it with poultry, but since the cooking time is long, the pieces often fall apart when mixing.

I love barley porridge with meat very much, it is delicious. I just cook it in a slow cooker, then there is no hassle with it at all, there is no need to follow. But about freezing is interesting, you need to try.

And this is a good example that you can make not only milk porridge in a milk cooker. I can put out a few more simple recipes (pea porridge and buckwheat with chicken), there the cooking time is shorter and you don't need to add anything.
