There is a lot of sugar in the melon, so it took a long time to dry. As a result, the melon strips seem to be dried already, but all the same sticky. But, delicious!
The product is not for weight loss, there is no fat in it, but the GI is 60 units!

But my question is about the melon. In the summer that year, I dried it with thin, small plastic. Stored in sealed bags from which the air was removed. The freshly dried melon tasted great, but when it was taken out of the bag six months later, the smell of dried fish came from there, and then when chewed, there was also a slight aftertaste of fish oil at first. Could it somehow oxidize? I didn't dry it out or shouldn't I have kept it in an airtight bag?

Most likely she did not need to be stored in a closed bag, she did not have enough air. It is better to store such a product in a paper bag and not for long.
For longer storage, it is advisable to pre-treat the melon with sugar syrup before drying, this will serve as a preservative.
