Ingredients

Melon 1 kg. (cleaned)
Sugar 2 glasses
Water 1 glass
Orange 1 PC.
Lemon 1 PC.
Powdered sugar 2 tbsp. l.

Cooking method

  • Any melon is suitable for candied fruits, even unripe and savory. If the melon is very overripe and very soft, then it is better to just eat it. By the same principle, you can cook candied fruits from watermelon rinds.
  • So, first, wash my melon, cut it in half and take out the seeds. It is necessary to get rid of the peel, so we peel it off with a vegetable peeler or an ordinary knife. Then we cut the melon into slices 1-1.5-2 cm thick, and then each slice into pieces (the size is again approximately 1-1.5-2 cm).
  • Now you need to prepare the syrup. Pour water into a saucepan, pour sugar, and, stirring constantly, cook until sugar is completely dissolved. When the sugar has dissolved, we consider that the syrup is ready, and pour the pieces of melon with it. We leave in this form for 12 hours at room temperature.
  • After the time has passed, pour all the contents into a saucepan and set to cook. To this we add the zest of half a lemon and half an orange (I remove the zest with a vegetable peeler), and also squeeze the juice from the same halves. When the melon boils in syrup, cook over medium heat for another 15-20 minutes. Remove from heat and leave for another 8-12 hours. When the melon is infused, put everything in a colander and let the liquid drain (the syrup can then be used, for example, to soak the cakes). Now there is only one thing left to do - to dry the future candied fruits. This can be done simply in the air, laying it out on parchment, for several days, or in the oven at a temperature of 70 degrees with the door ajar for 1-2 hours. I will dry them in a dryer at a temperature of 55 degrees (this is the maximum temperature for my dryer). Candied fruits dry in 5 hours (to a dense plastic state). If you want softer candied fruits, accordingly, dry less time.
  • When I treated my mother to these candied fruits, she didn't even understand what they were made of.

I did it only from the hard part near the skin and cut it in long strips to weave the pigtails; boiled in the morning and evening for three days, then in the dryer and it came in the sun.

The idea is not mine, my friend's mother does it like that - she weaves pigtails from both melon and watermelon. And it was interesting for me to try different weaving (as in macrame), but it is easy to make only four stripes, they are flexible, but delicate, break. I immediately cut long stripes with an ordinary knife and cooked according to the recipe some then ready-made ones, cut them in half lengthwise and wove them, it's easy and quick.
