Mint Ice Cream with Chocolate Chips

Ingredients

Milk 250 ml
Cream 33% 500 ml
Sugar 150 g
Yolks 4 things
Sea salt pinch
Bunch of fresh mint 200 g
Chocolate for chips (bitter is better) 100 g

Cooking method

  • Prepare "mint milk" in advance.
  • Rinse the mint and tear off the leaves, use only them for ice cream. From a bunch weighing 200 g, you will get about 100 g of leaves.
  • In a saucepan, mix milk and 250 ml of cream (the remaining cream is added just before placing in the ice cream maker), sugar, salt, mint and put on fire.
  • Heat the mixture to a very hot state, but do not boil. During heating, the mint will darken and decrease significantly in volume. Turn off the heat and let the mixture cool completely and brew.
  • I always leave it overnight and make ice cream in the morning.
  • Chocolate chips.
  • We prepare them in advance, immediately after making the mint mixture: the chocolate should freeze well in the freezer.
  • Chop the chocolate into pieces, place in the microwave and melt at 450 watts in two or three doses for 40 seconds. Take it out each time, stir it, and if you see that there are pieces left, put the chocolate in the micro again for a few seconds. He must become plastic. But don't overheat! If the chocolate is stratified, it is best to throw it away and use another bar.
  • Spread the chocolate on a sheet of parchment with a spatula / knife / spatula to the thinnest possible layer. Place in the freezer.

  • Making ice cream.
  • Strain the cooled mixture, squeeze the mint cake thoroughly. Put on fire and heat.
  • Beat the yolks slightly and pour the mint milk into them in a thin stream. Put the cream on fire and boil over low heat to a temperature of 75-80˚. If you don't use a thermometer, just watch the consistency: the cream should thicken slightly.
  • Remove from heat and cool.
  • Pour the remaining 250 ml of cream into the cooled mixture and cook according to the instructions of your ice cream maker.
  • While the ice cream is preparing, remove the chocolate from the freezer and quickly break it with your hands into small pieces of any size. The chips are ready. Place them back in the freezer.

  • Put in layers in a container: ice cream - sprinkle with a layer of chips - again a layer of ice cream - sprinkle with chips.

I just reduced the number of yolks: and with four yolks, the ice cream is tender and plastic.
Compressor ice cream makers can safely reduce the amount of cream or use less cream. I do so
Sometimes, at the request of homemade chips, I use milk chocolate. But for my taste it tastes much better with bitter. In addition, it is more difficult to work with milk chocolate: it freezes badly, and, unlike bitter chocolate, remains plastic even after a long freezing.
Dark chocolate chips really crunch in ice cream.
