Ingredients

Lamb, beef 500 g
Onion 4 things
Carrot 2 pcs
Potatoes 500 g
Greens (parsley, dill)
Garlic 3-4 teeth
Zira, turmeric, salt, pepper mix taste
Hot pepper 1 spicy
Vegetable oil 3 tbsp. l.
A tomato 2 pcs
Dumba 100 g

Cooking method

  • Kaurma-shurpa
  • They will beat me for an hour, but I will not be silent even here! I need to somehow draw attention to myself, otherwise Lenka overshadowed everything with her embroidery!
  • It all started with the fact that Lenka appeared in our life and an amazing authentic Uzbek cuisine, then a cauldron appeared (donated by Lenka), and then I swung at the "sacred" and here's the result.
  • This is the option where everything is pre-fried. Fried shurpa allows you to kill two birds with one stone - use a couple of bare bones for the soup and a handful of meat cut from them, which will allow the frying to "draw out" the broth, and add more off-season vegetables to the soup. (well, I'm being clever, but in fact it is tastier, richer, and as the "living classic" Lenka says - the winter version of the shurpa)
  • In a cauldron, fry the dumba, pieces of lamb and beef (I had oxtails and pieces of lamb on the bone), then add onions, carrots, tomatoes, spices to the meat and continue frying.

  • When everything is well fried, pour everything with boiling water (what would cover), tomato paste, close the cauldron with a lid and cook-simmer, for 20 minutes, until the meat is ready

  • After the stated time, add boiling water, put coarsely chopped potatoes and cook until they are ready

  • Here the potatoes are boiled, add crushed garlic, chopped greens and a cut hot pepper, bring to a boil, turn off and leave the "zhenitz" for 20-30 minutes ...

  • Anticipating the question about chickpeas, to be honest, I completely forgot about it, I cooked from memory, and, as you know, I have a girlish one (although I remember Lenin ... it's strange ...). Having welded, I remembered, shoveled a bunch of sites about "this" and realized chickpeas is an option, so here! If you want to cook, you want to throw slippers into the mnu, but it was delicious for us. The children definitely said: "Just like Aunt Lena's!" And this is the highest praise (not to be confused with baklava) in my understanding of Uzbek cuisine
