Adjarian Khachapuri

Ingredients

Dough
wheat flour / grade 300 grams
milk (kefir, yogurt) 100g
water 90-100 grams
vegetable oil b / s 40 grams
salt 0.5 tsp
sugar 0.5 tsp
instant yeast 1 tsp
Filling
suluguni (mozzarella, Adyghe, feta cheese) 250-300 grams
sour cream (cheese brine) or flour as needed
egg 2 pieces
butter 20 grams

Cooking method

  • I kneaded the dough in HP on the "Dough" mode. Kneading 5 minutes, rest 5 minutes, 10 minutes kneading. Ascent 40 minutes.
  • I added all the ingredients according to the instructions and turned on the program.
  • After the signal, I took out the dough.
  • Adjarian Khachapuri The dough is very soft, mobile, but not sticky.
  • If kneading with your hands or with a food processor, knead the dough without oil. Cover and leave for 10 minutes. Add oil in portions. Knead until the dough is smooth.
  • Put in a warm place to rise for 40-50 minutes.
  • Divide the dough into two equal parts using a scale.
  • Adjarian Khachapuri Form "boats".
  • Stretch the dough with your hands into a rectangle, make the middle thinner, thicker sides.
  • Tuck the sides into the middle, pinch the ends, stretch to the sides, fill with the filling.
  • Filling.
  • Any cheese from the above, grate or knead with your hands.
  • If the cheese is dry, then add sour cream, milk or brine from the cheese. The filling should be of medium consistency.
  • If the filling is too thin, add flour.
  • The filling must be filled tightly.
  • We bake in an oven preheated together with a stone to a temperature of 240 degrees (if there is no stone, then the oven is on an inverted baking sheet).
  • Bake the first 5-7 minutes with steam.
  • 2-3 minutes before cooking, drive an egg into the middle, after making a depression in the filling.
  • We take out, sprinkle with herbs and put a piece of butter.
  • We serve hot.
  • Break off a piece of dough and dip it into the filling. Vkusnoooo!

What a real Adjarian khachapuri should look like:
- the dough should be light and crispy;
- the sides and ears should be rosy, and the inside - soft, but well baked;
- the proportion of dough and cheese should be 1: 1;
- the bottom should be thin and dry;
- there should be a lot of cheese with butter, and they should stretch and soak the pieces of dough well;
- cheese should not be salty or bland, but just right;
- the egg should be soft-boiled, but with a white film on top;
- when you eat the "boat", you should be fed up, but want to eat another one.

Heat the sheet with the oven. Put the boats directly on it. I always bake on baking paper. I put it on it, drag it onto the shovel and transfer it from it. If there is no shovel, then you can pull another off the baking sheet.
