Pumpkin cupcake

Ingredients

pumpkin puree 300 ml
sour cream 3 tbsp. spoons
butter (margarine) 140 grams
sugar 250 grams
egg 2 pieces
salt 0.5 tsp
soda 0.5 tsp
baking powder half knife 2 tsp
Apple 1 piece
dried cherries (raisins) 100g
cinnamon 1 tsp
ground ginger 1 tsp
vanilla taste
nutmeg 1/3 teaspoon
flour in / grade 450 grams
icing sugar or icing option

Cooking method

  • Beat soft butter with sugar.
  • Add eggs one at a time.
  • Turn off the mixer.
  • Cut the apples into small cubes.
  • Add mashed potatoes, sour cream, cherries and apples.
  • We mix.
  • I cook mashed potatoes in the microwave. I cut a pumpkin thinly, cover it with a cap and keep it at a maximum for 4-5 minutes. Puree with a hand blender.
  • Mix flour with spices, baking powder, soda and salt.
  • Mix with liquid ingredients.
  • You may need less or more flour. It all depends on the density of the puree, the size of the eggs and the moisture content of the flour.
  • The dough is laid out with a spoon. It doesn't pour.
  • Grease the form with margarine or butter.
  • Lay out the dough, flatten. We put in a preheated oven.
  • Bake at 170 degrees for 60-70 minutes.
  • We take out, let cool.
  • Sprinkle with powder or glaze.
