Apple jam for food and pies (with cinnamon and lingonberries optional)

Ingredients

Apples (preferably at least two varieties) 1 kg
Lingonberries (can be frozen, if desired 0.5-1 tbsp.
Sugar 150g - 300g
Cinnamon (optional) 0.5 tsp

Cooking method

  • It's time to save the apple harvest and get ready for winter, so that you have something to make pies with or just drink tea on frosty winter evenings. I won't open the Americas, but this version of apple jam has been used in our family for as long as I can remember.
  • If the apples are fragrant and sweet, then you can cook without cinnamon and lingonberries. But try boiling one dose with additives, you can buy a bag of lingonberries at the store.
  • If possible, then for this jam it is better to choose two varieties of apples: one is indigestible when boiled, the other, on the contrary, turns into mashed potatoes when boiled. Then the pieces will not float in syrup, but in applesauce, which is the best option for filling in pies.
  • Preparation
  • - Wash the apples, peel, cut out the core, cut into slices, no more than 1-1.5 cm thick, and then into arbitrary pieces, not small!
  • - Put apples in layers in a clean large saucepan and sprinkle with sugar. Top layer of sugar. Press down slightly and leave overnight in a cool place under a lid.
  • By morning, the apples will give juice.
  • - We put the pan on medium heat and bring to a boil, let it boil for 1-2 minutes, well, but gently, stir so that all the apples are blanched in syrup, and set aside for 10 hours. You can until the next day. (Nothing bad will happen if you cook the jam right away, but it tastes better with the delayed option.)
  • We sterilize the jars in a worldwave with a small amount of water until boiling on medium mode, let the water boil for a couple of minutes. Boil the lids for three minutes in a saucepan on the stove.
  • - Bring the jam to a boil again, throw lingonberries and cinnamon into the boiling jam, cook on an active fire for 5-10 minutes (here you need to try the pieces, they should be boiled, but whole)
  • - We take out the jars from the microwave, drain the water and transfer the boiling jam to hot jars. We immediately close the lids and wrap upside down until cooling. Before wrapping each can, I still wrap it in newspaper, as my grandmother always did.
  • Can be cooked without additives. In winter, open and add rum (cognac), cinnamon or zest, and powdered cardamom. If the jam is not very thick, and this largely depends on the variety and condition of the apples, then add a spoonful of starch (better than corn) when baking the pie.
  • The amount of sugar depends on the variety. This year I added 150 g per 1 kg of apples, there was an Autumn striped variety (Streyfling, Shtrifel) and unknown to me, which is also sweet and well boiled.
  • Store in a cool place at home. Stored for a long time.
  • If in doubt about the quality of apples, then you can sterilize before the final closing in the microwave until bubbles appear (jam boiling in a jar) on medium mode.
  • Here you need to make sure that the jam does not overflow. The process takes 2-3 minutes for 5-6 cans of 0.75 liters. I can do without it.
  • In the photo, the jam is in the process of cooking - I have not opened the cans yet. The lingonberries will then boil down. The apple pieces will remain light, and the puree will acquire a pleasant pinkish color.
  • If the apples are sour, then try and add sugar during cooking or before making a pie.
  • Enjoy your tea party!

Note

It happens that when the apples are well laid, then not very much juice is released.In this case, you can add a glass of boiled water or stick to the jam and stir constantly so as not to burn.
