Pumpkin salad with Fetax cheese (inspired by Nigela Lawson's recipe)

Ingredients

Peeled pumpkin 200-300g
Red onion 1 medium onion
Lime 1 PC.
Lollo mix salad 100-150g
Fetaxa cheese 200 g
Olive oil 4 tbsp. l.
Ground red hot pepper 0.5 tsp
Zira pinch
Salt taste
Ground black pepper taste
Honey, balsamic vinegar optional
Sesame

Cooking method

  • Cut the pumpkin into slices and place in a baking dish. Drizzle with a couple of tablespoons of olive oil, sprinkle with hot pepper powder and cumin. Bake in the oven, preheated to 200-220 degrees, for 30 minutes.
  • Peel the red onion, cut into thin half rings, put in a bowl. Squeeze lime juice into onion. Leave to marinate while the pumpkin is baked. It is very interesting to watch how the onion turns transparent pink. Delicate, beautiful.
  • Cut the fetax into cubes ..
  • Cool the baked pumpkin slightly so that it is just warm, not scalding
  • Put the washed and dried salad in a transparent salad bowl, put the pickled onions on it. Put fetax on top. Mix everything with your hands (or with two forks) so as not to crush the lettuce leaves. Then spread the pumpkin into the mixture.
  • Beat up the remaining butter, lime juice from the marinating onion, salt and black pepper. Add honey and balsamic vinegar to the dressing, if desired. The honey will accentuate the sweetness of the pumpkin and soften the flavor of the salad. Pour the resulting sauce over the salad.
  • Dry in the microwave or in a frying pan sesame seeds. Sprinkle over salad.
  • Serve as an appetizer, or with stews or baked meat.
  • I stewed beef with narsharab Tanyulin reueptu and used it with boiled potatoes and this salad. Delicious!

I adore Nigel Lawson. Her video is ready to watch endlessly. She is a goddess in the kitchen! I cooked a lot according to her recipes. She makes this salad with relatives. And then everything looks very harmoniously pink with orange splashes of pumpkin and white cheese. I used a salad that I could find in our stores.
The original recipe also uses pine nuts, not sesame seeds. But I am a big lover of sesame, how pleasantly it crunches on my teeth. And in general, sesame and cumin give this salad such an oriental flavor. But in general, the salad is quite spicy. If anyone is afraid of such stinginess, you can use half an onion and the juice of half a lime. And also exclude hot peppers. Honey, for my taste, is superfluous here, because the baked pumpkin is already sweet.
