Chocolate cream (Pots de creme) with cherries

Ingredients

Brown sugar 80 gram
Maximum fat milk 250 ml.
Cream 32% fat 250 ml.
Eggs C-1 2 pcs.
Egg yolks 2 pcs.
Sugar 1 tsp
Chocolate (preferably dark) 50-60 gr.
Vanillin, carob upon request and availability
Frozen cherries 300 gr.

  • It got colder here. And I wanted something sweet, creamy caramel, nourishing. And to quiet music, wrapped in a warm blanket, eat slowly with a spoon. Eh, dreams ... dreams ...
  • I hope that you will be able to eat this treat just like that! But you will definitely succeed in cooking. Everything is simple and fast. I think our craftsmen will adapt the microwave to this. But it's cool here, and the included oven is even pleasant.
  • Defrost cherries in the microwave or on the table - it doesn't matter, but the main thing is in a sieve. Also, then you need to squeeze it slightly so that excess juice does not interfere with us.
  • Beat eggs and yolks (not to foam) with 1 tsp. white sugar. Mix the cream with milk and heat it well with vanilla in the microwave. Crumble chocolate (break). Melt brown sugar in a ladle until caramelized. Pour in half of the cream and mix quickly with a whisk. If the caramel has gathered into a large candy, no problem. Will gradually dissolve. Dissolve the sugar in the creamy milk, gradually adding the remaining half. Boil the mixture and remove from heat. Pour in the egg mixture in a thin stream, without ceasing to interfere. Then we introduce chocolate and carob. I put Carob for the scent. It is quite possible without it. I just have it and therefore I shove it where possible. Knead until the chocolate dissolves.
  • Preheat the oven to 160-180 degrees. We put the molds in a tray filled with water up to the shoulders of the molds. Pour the dessert into molds and lay out the cherries. We bake until it grabs to your favorite consistency. I like a lot more dense, so I baked for almost 40 minutes. Classic cream consistency.
  • Serve cooled, sprinkled with icing sugar and garnished with cherries.

Please tell me, what volume of 5-6 portions did you get and can it be stored in the refrigerator without compromising the taste? Or better to eat right away!
