Ingredients

chicken's meat 1150 gram
walnuts 50-60 grams
nitrite salt 22 grams
nutmeg 1 gram
garlic 1 clove
juniper berries 1-2 pieces

Cooking method

  • Crush pepper and juniper in a mortar.
  • Mix salt, spices and garlic, which has been passed through a press.
  • Knead the meat with a spatula in a food processor or with mixer hooks.
  • Add spices.
  • Gradually pour in the cream and water.
  • Knead until the state of stickiness and development of threads.
  • If the minced meat is heated, then we stop the kneading and put the meat in the freezer.
  • The entire liquid should be absorbed.

  • We cover and put in the refrigerator for a day.
  • You can do with meat in three ways: make a roll, like mine, fill a shell, or send it to a ham maker.
  • Spread the minced meat tightly on the film, level it, trying not to have voids.

  • Insert a thermometer probe into one of the rolls.
  • Put it in a cold oven.
  • We gradually increase the temperature.
  • 1 hour to 50-60 degrees,
  • 2 hours to 70 degrees
  • 3 hours to 80 degrees.
  • Cook at this temperature until the inside of the loaf reaches 68-70 degrees.
  • We take it out, let it cool down a bit and put it in the refrigerator for 8-12 hours.
  • Cut and enjoy!

The only thing, I chopped the thighs on knives in the combine, and cut the mini-breasts (they are under the chicken's breast) with a knife with a quail egg ... But it seems to me that the combine chopped this tender meat even more with a hook when kneading, so it looks more like sausage than a roll. I will work on this issue - I will make the speed a little lower when kneading and I will not grind anything, only cut it.
