Cheese rolls with mozzarella

Ingredients

Dough:
dry yeast 1 tsp
wheat flour c. from. 100 g
mozzarella serum 100 g
sugar 1 tsp
Dough:

water 40 g
salt 0.75 tsp
sugar 1 tbsp. l
curd cheese (almette) 60 g
hard cheese 50 g
butter 20 g
Filling
Mozzarella 120-130 g

Cooking method

  • Dough:
  • Mix yeast with flour, add sugar and whey, mix. Leave to ferment at room temperature for one hour.
  • Dough:
  • Add 150 grams of flour, salt, sugar, water, curd cheese and grated hard cheese to the dough. Knead for 7-8 minutes.
  • Add softened butter and remaining flour. Knead a soft, non-sticky dough.
  • Leave to ferment at room temperature for an hour and a half. In the middle of fermentation, knead the dough once.
  • Put the finished dough on the table, knead, divide into six equal parts.
  • Mash each part with your hands into a round cake. Put a slice of mozzarella in the middle of the flatbread. Carefully collect the edges of the tortilla so that the cheese does not leak out during baking, forming round loaves.
  • Place on a baking sheet lined with baking paper, seam side down.
  • Proofing under the foil for 50-60 minutes.
  • Bake the rolls in an oven preheated to 220C (convection 200C) degrees with steam for the first 7-8 minutes, then reduce the temperature to 190C (convection 170C) degrees and bring to readiness.
  • Put the finished rolls on a wire rack and cool slightly. Best served warm.
