Ingredients

Dark beer (ideally Guinness) 250 ml
Butter 250 g
Cocoa powder 75 g
Sugar 400 g
Sour cream 142 g
Large chicken egg 2 pcs
Vanilla extract 1 tablespoon

Soda 2.5 tsp

soft cream cheese (like Philadelphia) 300 g
powdered sugar 150 g
whipping cream 125 ml (I took 200)

Cooking method

  • Preheat the oven to 160 degrees (convection) or 180 degrees in oven mode. Prepare cupcake molds - I have 2 trays of 12 each, I make cupcakes in paper tins
  • 1. In a scoop over low heat, stirring occasionally, melt butter in dark beer, remove from heat as soon as the butter melted
  • 2. In a separate bowl, mix the sugar and cocoa
  • 3. Introduce the sugar and cocoa mixture into a scoop with beer and melted butter, stir until dissolved
  • 4. Whisk and mix sour cream with eggs and vanilla extract until smooth
  • 5. Introduce a mixture of eggs and sour cream with vanilla into a scoop, stir
  • 6. Mix the sifted flour with baking soda
  • 7. Put flour into the scoop, stir
  • 8. The dough will be thin, so I poured it out of a measuring plastic jug with a spout. We fill the molds 2/3
  • 9. Place the trays in the oven, bake for about 20 minutes, swap the trays in the middle of baking for even baking. Check readiness with a toothpick (should come out dry)
  • 10 Cool for 10 minutes in tins, then on a wire rack.
  • Cream for decoration.
  • 1. Beat with a mixer soft cream cheese with powdered sugar (you can pre-sift it through a strainer if it is too lumpy)
  • 2. Stir in the cream and beat until tender - it is important not to interrupt! - soft peaks and stop whipping, it's better to bring it to the desired state with a spoon. Do not be offended that I chew like that, but I myself whipped cream into butter several times - it was so offensive later.
  • 3. I added another 1 tsp. cognac, but this is not in the recipe and you can not add
