Note

All my childhood was spent in Latvia, then still Soviet, good-natured and hospitable. It was a wonderful time! We had a dacha in Jurmala, in Meluzhi, almost by the railway itself, but it took about 15 minutes to walk to the sea ... In the morning we could drive a bike for the freshest cottage cheese, sour cream and milk, and then take the dog to the sea! !!! You just had to cross the central street of Jurmala, walk along the dachas and go out into the pine coastal strip ... The sand is white and fine, warm, the wave runs onto the shore ... And this smell of the Baltic sea! Iodine-tart, cool and salty. The sea is shallow and cold, but we are children, we are not cold, we have a happy Soviet childhood! And at home, boiled pork legs in spices, this salad, whipped cream with apple mousse ... And then everything collapsed overnight on the night of August 26 ... A monument to Lenin was dragged by my neck with a helicopter, people were happy like children. not knowing how it will end. The dacha was taken away, the grandfather was ranked among the Russian invaders and enemies of the people, taking away all the regalia, privileges and pension only because he, half Latvian, defended his homeland during the war ... Then there was restitution, the grandfather was moved to the outskirts of Riga, he strongly passed, although he did not show his appearance, tried to adapt, but it did not work out ... I just lived, sorting through old photographs and memories ... The last time I was in Riga three years ago at my grandfather's funeral ... But the sea didn’t smell like that ....

Irina Dolars, great !!!!

Baltic cuisine is generally quite spicy. But spices of a different plan, colder or something, but at the same time awakening and giving warmth ... Cumin, coriander, ginger, cinnamon ...
Svettika
Mashun, delicious salad! And the story is touching! Thank you!

It looks like she didn't wait a bit - the caraway was a bit harsh. Next time I'll leave it for the night, that would be sure. But it's very, very tasty. Thank you.
SchuMakher
Mandraik Ludmila, this is speed !!!! Many people just like the crunchy caraway seeds
Shyrshunchik
Manechka, delicious salad, the same I do. And you can rub the caraway seeds a little bit with salt between your palms. It will be less firm and more aromatic.

the Baltic Sea!
I lived in Lithuania, we called the sea Baltic, Mash ...

This salad is delicious! I usually chop more cabbage, mix it with caraway seeds, and mayonnaise and, if necessary, salt - before serving. Then the cabbage gives off juice, and the caraway becomes softer. But it is not stored in the refrigerator for a long time: it does not have time ...
Mandraik Ludmila
Tatyana, I will consider, thanks.
And the crunch is scary, I'm afraid to spoil the teeth.

Store caraway, for some reason it is very hard, I didn’t expect, before it was used only in bread and bigos, there it is steamed, but here, well, there are pebbles, although it gave a taste.
Yet she underexposed the salad - she ate ahead of time. Cabbage is my weakness.
Kirks
SchuMakher, Mash, thank you for the memories, it's sad to read and thanks for the salad too, I've never eaten cabbage with caraway seeds, I'll definitely try
Trishka
SchuMakher, Manya, what an interesting recipe, you must try!
I took it in, thanks !!!

And the story is warm, but very sad ...
SchuMakher
Thank you, Ksyusha.... Try it, it's really tasty, my grandfather did just that, he didn't steam up the cumin, he didn't rub it ... This crunchiness is a childhood memory

All my stories are some kind of sad poluchayutstsa ... As Zhvanetsky says, "Can I fix something at the conservatory?"

Masha, what mayonnaise do you use?

Masha, what mayonnaise do you use?

home exclusively
Kokoschka
SchuMakher, it is clear that it is homemade, but what recipe do you use?
SchuMakher
Kokoschka,
Vegetable oil 250
Egg 1 pc
Vinegar (lemon juice) 1 tbsp l.
Mustard 1 tsp
Salt 1/3 tsp
Sugar 1/3 tsp
Everything is in a tall glass, you step on the egg with your blender's foot so that it is under the dome together with the mustard and you start beating NOT SHEVEL until the actual mayonnaise crawls out from under your foot, as you climb, you can already crawl up and down ... actually that's all ... you can add greens, add garlic there ... If it's thick, I dilute it with water
Kokoschka
SchuMakher, Masha, what about raw eggs?
What about salmonella?

My husband was a big lover of raw eggs.Had been ill with salmonulosis 2 times, now everyone at least stopped drinking raw eggs ...
SchuMakher
Kokoschka, I wrote on this topic a hundred times already ... Salmonel on vegetables (on the same cabbage) is much more than on and eggs from state factories, where strict accounting and control (according to V.I. Lenin) ... a hundred years ago it was said on infectious diseases and on a dignity. hygiene

a? I just dip the cauliflower buds in cold salt water for a little while. And then I rinse and cook. And what?
And how are you?
And Peking (sinful) is not mine. I took off the top leaves and Hello!
SchuMakher
No, well, not that word that it is there necessarily, but the earth is harder to disinfect than a closed poultry farm ... Therefore, vegetables must be washed more thoroughly than eggs

And also Listeria and other things. An infectious disease specialist told me how to wash vegetables and fruits correctly. Everything is fine, but you can't wash grapes, salad, etc. that way (brush, detergent, boiling water ...)
mamusi
In short, pour boiling water over the Beijing one?)
I see, I'll write it down
Kokoschka
That's right ....: o This is where the germs are hiding .......
Masha and eggs that any brand is not scary?
SchuMakher
Kokoschka, I only take the shops ... I don't even buy from a friend in the market
Kokoschka
SchuMakher, understandably. I also only shop
