Ingredients

active wheat sourdough 100% moisture 150 grams
wheat flour / grade 260 gram
Corn flour 50 grams
Wheat flour c / grain 50 grams

Molasses (dark molasses) or honey 12 grams
Flax oil 1 tbsp. the spoon
Flax seed 30 grams
Instant yeast 1 gram
Sea salt 9 grams

Cooking method

  • Feed the sourdough 6-8 hours the day before.
  • Mix all types of flour with yeast.
  • Dissolve the molasses in water.
  • Kneading was carried out in KhP using the "Testo" program (5 * 5 * 10). I knead with the lid open so that the dough does not overheat. If you knead with a hook, then knead for 12 to 15 minutes.
  • I loaded the sourdough into the bucket, poured water with molasses and put flour.
  • After 5 minutes of kneading, added oil and salt.
  • 3 minutes before the end, I added flax.

  • Round off and put on fermentation. Fermentation for 120 minutes. In the middle of the process, stretch-fold once.

  • We form bread of any shape.
  • Proof seam down on baking paper for 60 minutes. Proofing may take longer or less. To check the distance between the bread or not, press on it with your finger.

  • We make incisions.
  • We bake on a stone, which we heat together with the oven, at a temperature of 240 degrees for the first 15 minutes with steam.
  • We remove the steam, lower the temperature to 180 degrees, briefly air the oven. We bake until ready. I have another 20 minutes.
  • We take it out, let it cool on a wire rack, cut it and enjoy!
