I started a dough - 100 ml of water, yeast, half a glass of flour. There is a lot of yeast in the dough, she got up quickly, gave her an hour to wander. While the dough ferments, brought the milk, sour cream and butter to a boil and brewed 2 cups of flour, cooled it down, mixed in the eggs, and it turned into a choux dough. I combined the custard dough, dough, added the remaining flour, the dough is not steep, and kneaded in a bowl with spiral kneaders of a hand mixer. I put it on cold fermentation, 8 hours is enough. After 2-3 hours, I dabbled with kneaders. I decided to bake in a gas oven, the dough turned out a lot. Divided into 6 parts, each with hands stretched into a layer and rolled up rolls, they entered well on a large baking sheet. I put it in a cold oven, it took 1.5 hours for me. She turned on the oven, my gas stove is antediluvian, it was baked for an hour and a half, and you look at your devices. Since there is no sugar in the dough, the bars did not become fried, but of a very beautiful golden color, very light, dry, porous. The choux pastry tasted good, and the egg flavor was good too. I really liked the bars. The crust tastes like bagels. Next time I will roll thin sticks so that there are more crust. You can make dough without dough. But I almost always check yeast, especially pressed from the freezer, with dough, and they invigorate better in it. But yeast in water will still have to be diluted.
