Ingredients

Beef (pulp) 350 g
Chicken breast 350 g
Butcher's salt (nitrite) 1 tsp with a slide
Cream 10% 100 ml
Water 100-150 ml
Adjika dry 1 tsp with a slide
Hmeli-suneli for sprinkling, as needed

Cooking method

  • Both types of meat must be frozen. Well, or half thawed. So, as we all know, it cuts smoother and turns better in a meat grinder. Cut the chicken breast into small cubes, with a side of about 1 cm or a little less, a little more, it doesn't matter. We pass the beef through a meat grinder. Since I have only one grill, then ... In general, if you have several, turn on the smallest one - we need ground beef as "glue", and therefore the most delicate.
  • Well, and then - only the wonders of kneading: we mix the minced meat, breast and spices (except for hops-suneli), add cream, and begin to knead, whoever likes it, gradually adding water. I interfered with my hands, so not for long, about 7 minutes (it's cold!).
  • Next we need a heat-resistant baking sleeve. I cut it at the seams, because they (the seams) are unreliable, and when tightly wrapped, they almost always break. Therefore, it is better to make a seamless canvas, in which to wrap the resulting minced meat as tightly as possible. First, we form a kind of loaf on one edge of the film, bend the edges, wrap it tightly, take another film, wrap it carefully again, and tie it well with culinary thread.
  • In this state, we put it in the refrigerator for ripening for a while. The minimum for the ripening of minced meat is 30 minutes, and then ... up to two days, minced meat with spices lies in the refrigerator, ripens, and it only gets better. I only had this roll for 2 hours.
  • I cooked it in the steamer of my multicooker for 35 minutes. Yes, when shaping the roll, estimate the length to fit in your steam basket. And then I had a bad experience with a chicken roll in the form of the letter "siu"
  • When the signal of readiness sounds, prepare a large pot of ice water (we now have literally one from the tap). Take out the roll and send, without unrolling, directly in the film, immediately into the water until it cools completely. After 10-12 minutes, check the water, if it is very hot, change to cold.
  • When the roll cools down, remove the threads and the film, sprinkle the hops-suneli on top), rub the seasoning with your hands and wrap in foil. Place in the refrigerator for a few hours (overnight) to ripen.

I have an urgent need to make a lean (pork-free) sausage or something to put on a sandwich. There is a ham ... But there is no time, and not always I can plan my life so that I start doing it today, and get the result in a couple of days. Usually I have one day for everything ... And so this recipe was born. Lately I've been cooking something similar in a multi-steamer and the result suits me. This roll turned out to be the most successful of all, and even pleased her husband with its appearance, who missed the fat in the sausage. Though the eye is nice! Chicken breast really looks like fat.

But if you have any preconceptions, then ... There is some replacement, but with a loss of color. Salt with ordinary salt, and add a little (for such a volume of minced meat about 0.5 tsp.) Of baking soda. And keep in mind that you will need to eat your roll within a couple of days, because the natural product does not lie for a long time. With nitrite salt, he feels good for at least five days, after all, it is a good preservative.
