Spotted can be cooked in any form, I especially like to bake in the oven, then the steaks are plump. My relative from catfish even baked pies in difficult years, it was very tasty.
By the way, for some reason, in the North, whole salted catfish was always sold, bought, cut into pieces, boiled and ate with potatoes. My aunt called such a catfish a collar for its length.
