Mikado cake

Ingredients

Flour 3-4 tbsp.
Sugar 100 g
Sour cream 200 g
Slaked soda vinegar 0.5 tsp
Butter 80 g
Margarine 20 g
Egg 2 pcs.
For the cream:
Butter 200 g
Condensed milk boiled 1-2 ban.
Chocolate (for sprinkling) 1 PC. small

Cooking method

  • I never buy ready-made boiled condensed milk. And I do this, I take a good condensed milk and boil it for 3 hours (the most important thing is that the water covers the jar of condensed milk), then I cool it and make a cream.

  • For the dough, grind eggs with sugar, add sour cream, softened butter and margarine. Quench the soda with vinegar and add to the mass. Sift the flour and add to the dough in portions, kneading well each time. You should get a soft dough that does not stick to your hands. Divide the dough into 8-10 balls, cover with foil and put in the refrigerator for 1 hour.

  • Now you can take up the cream. Beat good butter at room temperature into a fluffy mass, and then add boiled condensed and beat again. All the cream is ready. We put it in the refrigerator.
  • We take out the dough. We roll out the ball, cut it out in shape (we don’t throw out the trimmings, another ball will collect from them), prick it with a fork and put it on a baking sheet covered with baking paper.

  • We bake at 180 C for about 7-10 minutes, until the edges begin to golden. When all the cakes are baked, we begin to collect the cake. To do this, simply coat the cakes with cream and put them on top of each other.

  • We also coat the sides of the cake with cream. Leave the cake at room temperature for 1 hour. Then sprinkle the cake with grated chocolate and put it in the refrigerator, preferably overnight.

This cake is from my Soviet childhood. I only recently learned that it is called "Mikado" and that it seems to have Armenian roots. Like many, having watched the next episode "The Last of the Magikyan" I decided to cook a real Armenian cake "Mikado". For the recipe for the cake I went online and what was my surprise when I realized that "Mikado" is nothing more than my cake with boiled condensed, which I have been preparing for ... in general, for many, many years. The recipe for a cake from my mother’s notebook, I don’t know where and from whom she got it, and she herself doesn’t remember anymore. For me, this cake personifies a holiday, when we gathered at the table as a large and friendly family and the cake was really a long-awaited and desired dessert. I can't even remember what was tastier for me then this cake, I began to desire it with all my heart even from the moment when helping my mother whipped cream with a wooden spoon and secretly licked it. Mmmmm ... It was fabulous! I still bake this cake for every birthday, only my daughter now makes the cream.
