Ingredients

Water (broth) 3 l
Potatoes 3 pcs.
Carrot 1 PC.
Onion 1 PC.
Champignon 4-8 pcs.
Pickled or pickled cucumber 1 PC.
Bay leaf 2 pcs.
Peppercorns 8-10 pcs.
Salt "Extra" 3 tsp or to taste
For the meatballs:
Mixed minced meat 300 g
Ground black pepper, salt taste
Egg 1 PC.
Round grain rice 80 ml
Rice cooking water 120 ml

Cooking method

  • I suggest you cook one of our family's favorite soups. It can be cooked both on the stove and in a multicooker. For the last two years I have been making it in the Polaris pressure cooker. It turns out faster.
  • Try it. Very tasty and not difficult at all.
  • COOKING.
  • Cooking rice.
  • I put the washed rice in a saucepan, fill it with water.
  • Cooking on the "Manual" program 4 minutes at pressure - 3. I put it in a bowl.
  • While the rice is cooling down, I pour water into the pot (I don’t rinse it after the rice) up to the 8 mark (this is 3 liters). I cover the lid, but leave the valve open. Or I cover the pan with a non-boiling lid.
  • Include Warm-up program, pressure - 3.
  • Preparation of vegetables and mushrooms.
  • I peel potatoes, onions, carrots. I cut the potatoes into cubes, rub the carrots on a coarse grater or cut into slices. Sometimes I use a Berner grater for slicing.

  • I cut half the onion into small cubes for meatballs, then put the remaining half into the broth.
  • I remove the peel from the champignons, cut them into slices. I also cut a cucumber. (I like half rings or quarter rings.)

  • Preparing the meatballs.
  • I mix minced meat, onion, cooled rice, egg, flour, salt and ground pepper. I knead everything well and make small meatballs.

  • Connection of components.
  • During this time, the water (broth) in the pan almost boils.
  • Salt liquid. I put potatoes, carrots, mushrooms, half an onion, cucumber, bay leaves and peppercorns. Add the meatballs. (If cucumber pickle is available, add a few spoons for flavor.)
  • I close the pot, set the valve to the "Pressure" position.
  • Cooking on the "Manual" program for 8 minutes at a pressure of 2. Keep on "Heating" for 10-15 minutes.

  • Sprinkle with herbs when serving.

  • P.S. I used to add a cube with chicken flavor to the water, but for the last 7-8 years I have excluded cubes from the diet altogether.

The recipe for this soup appeared in our family a very long time ago, somewhere in the late 90s.
One of the colorful women’s magazines had an entire spread of cutout recipes! (How happy I was with such a gift! Such a replenishment of my collection!) A bright color photo of the soup and the name "Magic Pot" immediately attracted attention. I liked the recipe, although the combination of meatballs and cucumber was very embarrassing. Then I cooked only the usual soup with meatballs (carrots, onions, potatoes, meatballs). I decided to take a chance. I found the products, prepared a small portion. How delicious it was! The combination turned out to be so successful that the soup has become a part of our menu. The name was kept so as not to be confused with the usual (ordinary) soup with meatballs. The exact proportions, of course, have already been forgotten - I cook it the way I like it, but I definitely add mushrooms and cucumber, because without them I can't make a "magic pot".

And you can add any cucumber. There is not much of it here. I like pickled a little more. They are similar to Bulgarian ones (the recipe is a proprietary one - I cook it every year). But, if pickles are open, I calmly add them.
