Orange cupcake

Ingredients

Butter (soft) 250 g
Chicken egg 4 things
Sugar (+ 1 tbsp for candied fruits) 200 g
Oranges (medium) 2 pcs
Flour 200 g
Corn starch 50 g
Almond flour 50 g
Powdered sugar 150 g
Lemon juice 3 tbsp. l.
Baking powder 2 tsp

Cooking method

  • What a New Year without orange-flavored pastries! Airy, and at the same time moist, with a caramel crust, aromatic and moderately sweet - this is its taste, which, I think, will please you and your loved ones!
  • All cupcake products should be at room temperature!
  • The zest of one orange grated goes into the dough. We make candied fruits from the second zest. Squeeze juice from the oranges themselves.
  • Sift flour, starch and loosening agent together.
  • Beat butter with sugar and add eggs one at a time. Add the grated zest and stir with a spatula.

  • Add orange juice and flour mixture in two steps, stirring with a spatula. Add almond flour and stir again.

  • It turns out a creamy dough.

  • Form (I can have a regular one with a pipe) 22 cm in diameter, grease well with oil and sprinkle with flour. Place the dough in it. Bake in an oven preheated to 180 "C for 40-50 minutes. Focus on your oven!

  • Dissolve sugar 1 tbsp. l. in 3 st. l. bring the juice to a boil. Place orange strips in syrup and simmer for 5-7 minutes.
  • Glaze:
  • Gradually introduce lemon juice into icing sugar and grind well (with a spoon) to prepare the glaze.
  • PS glaze should be quite thick, add more powder if necessary.

  • Bake in preheated to 180 "C oven for 40-50 minutes. Focus on your oven! Take the cake out of the oven and, without removing it from the mold, soak it with boiled orange syrup, making deep punctures with a thin wooden skewer.

  • Pour icing on the cupcake (I do it in 2 passes) and decorate with candied orange fruits.
