Bob-chorba (bean soup)

Ingredients

Dry / canned beans 100 g / 1 b.
Vegetable oil / fat 0.5 tbsp. l
Bulb onions 1.5 pcs.
Carrot 0.5 pcs.
Bulgarian pepper 0.5-1 pcs.
Celery root 10-15 g
Tomato / tomato paste 1 / 0.5 Art. l
Salt, red and black pepper, bay leaf taste
Garlic 1-2 teeth
Fresh / dried mint 1 tbsp. l / 1 h. l
Parsley, dill or any other greens taste

Cooking method

  • Soak dry beans in the evening, drain the water before cooking.
  • Dice the carrots, onions and celery.
  • Heat the oil / fat in a heavy-grated saucepan, add the chopped vegetables and fry for 5 minutes. Add chopped bell peppers and tomato / tomato paste and simmer for another 5 minutes. Pour beans into a saucepan, add 2 cups of cold water and cook for 40 minutes. (Canned, of course, open it, pour it into the pan with the broth, let it boil). Then add more cold water to the desired thickness of the soup, put the bay leaf, chopped mint and cook until tender for another 20-30 minutes. Season with salt and pepper, add finely chopped garlic and herbs.

I took frozen bell peppers and tomatoes, their own, delicious. And no potatoes!

There was no celery, I replaced it with parsley root (I put it in whole, after the end of cooking I took it out and threw it away). Canned beans in tomato, tomato from it. I replaced the water with chicken broth.
The soup has learned to be thick, very "warm". The mint in this soup sounds very soulful. The generous guest of greens and garlic only emphasizes it without clogging it.
